Based on Pennsylvania history, Amish women invented the whoopie pie. Holding up with their custom of avoiding wasting ingredients, the women would drop excess cake batter into mounds and bake them. Then they would take two of the mounds and sandwich them together with a creamy frosting. Easily portable, they would wrap them and put them in the men’s and children’s lunch boxes. The name is believed to have come from the Amish children who would yell “Whoopie!” when they would find these pastries in their school lunch boxes.

Recommend freezing immediately if not serving same day for optimal freshness. To thaw, leave wrapped and set out about 1-2 hours before serving. Whoopie pies don’t need to be refrigerated and can last about a week, if refrigerated they can last for a couple of weeks, but may not be as moist. If frozen, they will last for months.
